Article: Listeria’s Most Common Hideouts and How to Minimize its Risk of Spreading

Listeria is a very common bacterium that adapts well in many environments. It is found in soil, water, animal guts, and on raw foods, and it can easily be introduced into and spread throughout food production facilities.

Listeria can form biofilms that help them attach to the surface of floors, drains, and equipment – making them more difficult to remove during cleaning and protecting them from drought, heat, and standard cleaning and disinfection chemicals. Listeria biofilm is often the source of food product cross-contamination.

Latest Research Findings Hit On Produce Safety Priorities

The Center for Produce Safety (CPS) works to identify produce safety hazards, then funds research that develops that data as well as potential science-based solutions that the produce supply chain can use to manage those hazards. While two foodborne illness outbreaks in the first half of 2018 associated with leafy greens demonstrate the industry still has challenges to meet, CPS has grown into a unique public-private partnership that moves most of the research it funds from concept to real-world answers in about a year.

Where to Start on Your Company’s Food Safety Program

It All Started with NASA

With NASA having already called on the Pillsbury Company for development of a non-crumbling food, it asked the company if it also could provide food that was absolutely free of any disease-producing bacteria and toxins.

To address this, Pillsbury developed the HACCP (Hazard Analysis and Critical Control Point) program. Its purpose of preventing food safety problems before they could happen rather than detecting issues after occurrence was exactly what the space program needed and has been the foundation of its program since … and became the foundation of the earthbound food industry’s quality control and food safety programs in the 1970s.
