Minimizing Cross-Contamination in Food Production

5 Steps to Minimize Cross-Contamination

Cross-contamination, or, put simply, the unintentional spreading of microorganisms, can be prevented or reduced using five methods.

  1. Hygienic design: Tools that are hygienically designed have fewer places for microorganisms to hide and multiply in, and they’re easier to clean. Fewer nooks and crannies and gentle, cleanable slopes instead of hard right angles make tools (such as Remco and Vikan’s), easier to keep clean.
  2. Color-coding: Color-coding offers an easy visual cue so employees can quickly identify which tool should be used in which zone. Color-coding plans should be simple and easy for workers to adopt. Remco offers free training materials and consultations to help facilities implement plans that have been successful at other plants.
  3. Cleaning the tools: Tools themselves can be a vector of contamination. They should be cleaned frequently, and in accordance with HACCP plans, to prevent them from spreading harmful microbes. Hygienic tool design helps with this.
  4. Tool storage: If not stored properly, tools can spread contamination once they’re put away. Ideally, they should be spaced away from the wall and each other and hung in such a way they can dry safely.
  5. Tool replacement: Damage and regular wear can eventually impact a tool’s hygienic design and create areas for microbes to spread from. Replace tools regularly to avoid a recall, and empower employees to speak up when they notice a tool going bad.
